For example it could be football. You could take an image of them playing when they first started and chronicle their football career all the way up to high school or college.
One other thing you could consider creating a collage for is landscape. A lot of people love to take pictures of landscapes like mountains, sand dunes, valleys, or even the ocean. You could easily collect together your favorite landscape images and put them all in one frame.
